Cruising aroung the Simple Savings website today have seen a lot of mention of kiwi Sophie Gray and her company Destitute Gourmet. Sophie is a foodie who a few years ago had to feed her family (2 adults, 2 kids) on $60-70 a week. Being a trained chef she managed to create healthy tasty meals and has turned it into a business running demonstrations and has authored several (very worthwhile) cookbooks. I just ordered the latest one which I hadn’t seen before.
When living back in NZ a couple of years back, I was lucky enough to get to go to one of Sophie’s demonstrations. One of the recipes was this one here - it is now one of my staples. I even cooked it for a dinner party last year and everyone asked for the recipe afterward.
Mexican Spiced Tomato Soup - courtesy of Sophie Gray, Destitute Gourmet (www.destitutegourmet.com), at a demonstration of hers I attended in 2006
serves 6 as a meal with bread
2 tbsp olive oil
2 onions chopped
3 tsp Mexican seasoning (below)
3 cloves garlic
2 cans chopped tomato
1 1/2 c red lentils
6 cups beef stock (I used green herb stock as we didn’t have beef, plus makes it fully vego)
1/3 c tomato paste
2 tbsp brown sugar
1/2c fresh coriander or parsley
sour cream to garnish - optional
large saucepan heat oil, add onion, garlic cook till light golden. Mix in Mexican Seasoning then add tomato, stock, tomato paste, lentils and sugar. Bring to boil and stir then let simmer for 45mins. Add fresh chopped herbs and garnish with sour cream if desired.
Mexican seasoning - combine following in airtight container or small jar
1 heaped tbsp ground cumin
2 tsp sugar
1 tsp oregano
1 tsp salt
1 tbsp chilli powder
